A FUSION OF FLAVORS FROM SPAIN, ITALY & BEYOND.

The newest restaurant from the EDO Hospitality Group in Las Vegas, Anima by EDO continues the tradition of hospitality and border-free flavor from Roberto Liendo, Oscar Amador, and Joseph Mikulich. With a raw bar, charcuterie program, sharable plates, and considerate beverage program, Anima continues to elevate off-strip dining in Las Vegas.

Anima combines casual attire with a world-class dining experience. The lively ten seat bar builds energy in the left side of the restaurant and an open kitchen brings energy from the chefs into the dining room and creates a buzzing chefs’ table experience for small groups. Overlooking the courtyard, Anima’s private dining room hosts groups of 12 for private celebrations, wine dinners, and ticketed tasting events. Anima is open for dinner from Thursday through Tuesday, with lunch service coming soon.

Aromas of honeysuckle, white peach blossom and citrus zest, along with soft accents of vanilla. Silky stone fruit, lemon curd and honeydew flavors flow across the round, full palate, with lightly toasted oak, cool minerality and a lingering citrus note adding texture and depth.

Plush and ripe on the palate, bright notes of raspberry preserves and forest floor, plus the baking spice and confectionary accents that result from an elegant balance of new and neutral oak. There’s a beautiful purity of fruit from start to end, with generous berry notes and clove accents that pop on the finish.

Aromas of blackberry and red plum and a touch of earthiness and spice. Upon entry, this wine seduces the palate with dark fruit flavors with notes of black licorice and black olive tapenade. Melting on the palate with a long, supple finish that is supported by beautiful velvet tannins throughout.

From the first swirl, notes of espresso, blueberry and dark cherry immediately waft from the glass and envelop the senses. Silky and seductive on entry with flavors of blackberry and cocoa. This wine is beautifully textured with well-integrated tannins and a finish that is smooth and long-lasting.

The fruit-driven flavors follow the promise of the aromatics and an enticing blend of exotic notes are carried long into the finish. Together with notes of ripe, fresh loquat, orange, and apricot, the richness of this vintage is expressed with a vanilla crème brûlée character reminiscent of bakery smells, and flavors of caramelized custard.

Anima was founded by world-renowned chefs, Oscar Amador and Francesco di Caudo. The two partners are no strangers when it comes to world-class dining. Before opening Anima, Chef Amador was the executive chef at the Las Vegas staple, EDO, while Chef di Caudo was formerly the executive chef at Ferraro’s Italian Restaurant & Wine Bar.
