Chef François Payard
Receiving the Dom Perignon Award of Excellence at
Bubble-Licious at the Garden of the Gods Pool

François Payard became a award winning pastry chef by playfully reinventing the concept of dessert. It is not a stretch to say that he has chocolate running through his veins—the third generation pâtissier grew up in his grandfather’s renowned pastry shop on the French Riveria before working with the likes of Jacques Torres, Daniel Boulud and Sirio Maccione. |
Payard’s talent has garnered recognition from The James Beard Foundation, Bon Appétit, the International Pastry Competition Committee-Beaver Creek and the French Government. In 1997 he opened Payard Pâtisserie and Bistro in Manhattan’s Upper East Side and delighted diners with his signature treats as well as modern French dishes. The restaurant received Wine Spectator’s Award of Excellence for its exceptional wine list.
In 2008, the chocolatier opened his second American shop at Caesars Palace. Here, guests may experience the culinary delights of classic French dishes like the Croque Madame Sandwich or indulge in delicate gâteaux and tarts.

As founder, chairman, and chief executive officer of Sartini Enterprises, Inc and Golden Gaming, Inc., Blake Sartini has shaped the locals’ landscape with venues like PT’s Pub and Sierra Gold. After graduating from UNLV with a Bachelor of Arts degree in business administration, Sartini worked his way up the gaming industry at companies like Station Casinos, Inc where he oversaw the company’s incredible growth from one casino to eight regional casinos employing approximately 12,000 team members. In 2001 he formed his own company,Golden Gaming, Inc.,which has a hand in all

areas of gaming and hospitality via its three entities: Golden Casino Group, Golden Tavern Group, and Golden Route Operations. Sartini’s commitment to the Las Vegas community was again evidenced in 2007 when he founded Service1st Bank of Nevada, which supports local small and medium sized businesses and private clients by providing the highest quality financial products and services possible.

Upon graduating from UNLV with a degree in Hotel Administration, Bill McBeath proceeded to hone his skills at some of the most impressive properties Las Vegas has to offer. He has served as President and Chief Executive Officer of Treasure Island, The Mirage and Bellagio. His well-earned experience is put to good use at his current position as President and Chief Operating Officer of Aria, City Center’s lavish hotel and casino, where he has been an integral part of creating the world’s largest LEED certified building. Whether figuring out an eco-friendly way to allow smoking in the casino or leading the property’s 10, 000 employees, McBeath hits all the right notes. |
